Cannabis Infused Drink Recipes for St. Patrick’s Day
Irish Coffee 2.0
Irish coffee is a perfectly good drink. But, what if we took it to the next level with cannabis-infused coffee cubes? This will be a crowd pleaser for St. Patrick’s Day, but you can also keep cannabis-infused coffee cubes in the freezer all the time and toss them into dairy or nut milk for a delicious treat.
Ingredients (2 servings):
- 32 oz. cold brewed coffee or room temperature coffee
- 2-4 drops Stratos Renew 2:1 tincture
- 3 oz. Jameson Irish Whiskey
- 3 oz. vanilla vodka
- Cinnamon (optional)
- Whipped cream (optional)
How To:
In a pitcher, combine the tincture and the cold-brewed coffee. Pour the coffee mixture into ice trays and let freeze until completely solid (for best results freeze them overnight). When you are ready to serve, pour one shot (1.5 ounces) of whiskey and vanilla vodka into a cocktail glass. Fill the rest of the glass with the cannabis-infused coffee cubes. Serve with a dollop of whipped cream and a dusting of cinnamon if you are feeling extra fancy.
Irish Lemonade
Want something refreshing, but not as rich as an Irish Coffee? This drink hits all the boxes: yummy, festive, and just the right amount of sweetness. Don’t worry about getting too high with these. Using CBD tincture, you’ll get the relaxing benefits of cannabis without the high. This fruity, refreshing drink can be made all spring and summer long!
Ingredients (2 Servings):
- 2 oz triple sec
- 2 oz Irish Whiskey
- 2-4 drops Stratos Renew 2:1 tincture
- 1.5 oz lemon juice (fresh is best)
- 1 tbsp lime juice (fresh is best)
- 1 tsp fine granulated sugar
- ½ tsp blackberry preserves
- 2 drops green food dye (optional)
- 3 oz tonic water
How To:
In a cocktail shaker, toss all your ingredients in except the tonic water and fill the rest of the shaker with ice. Shake vigorously (there should be foam). Fill two cocktail glasses with ice and pour the mixture over the ice through a strainer. Top each glass with tonic and serve with a lime or lemon wedge.
How To Make CannaButter
Don’t be intimidated by cannabutter. It’s not as hard as it seems and once you get it down pat, you will open so many new doors for cannabis infused cooking and baking. The most important thing to remember is that the quality of cannabis flower you use can make or break your cannabutter. So don’t skimp out. Ingredients:
- ½ ounce decarboxylated cannabis flower
- 1 lb unsalted butter
- 4 cups water
Equipment:
- Cookie sheet
- Parchment paper
- Medium – large saucepan
- Strainer
- 2 pieces of cheesecloth
- Glass bowl
- Plastic wrap
Directions
To start, you’ll have to activate the THC in the cannabis through a process called decarboxylation. That’s just a fancy word for heating it up. Preheat your oven to 250 degrees and line the cookie sheet with parchment paper.
Next, break the cannabis buds down into small pieces and place it on the lined cookie sheet. Bake at 350 degrees for 50 minutes or until the moisture is completely out of the flower. Let cool completely.
Cut unsalted butter into small squares and put them in a saucepan with the decarboxylated cannabis and water. Let the mixture simmer on low heat for 3-4 hours, stirring thoroughly but slowly every 30 minutes. Remove from heat and let cool.
While it cools, line the strainer or colander with a cheesecloth. Place the colander or strainer on top of a glass bowl and slowly pour the butter mixture in. Push down on the mixture with a spatula or spoon so it is compacted on the cheesecloth. Put the glass bowl in the fridge for 2-3 hours or until completely cooled.
Once it’s cooled, flip the glass bowl upside down on top of a cutting board or large plate and gently shake until the contents come loose from the bowl. Use a towel to dab the excess water from the butter.
Mini Shepherd’s Pie
These are a perfect party favor for the St. Patrick’s Day party you attend or host! These mini shepherd’s pie are filling enough to keep guests content while the rest of the party snacks are prepared.
Ingredients (12 servings):
- 2 tbsp all-purpose flour (can use gluten free)
- 2 lbs refrigerated pie crust (or check out our recipe for canna-infused pie crusts!)
- 1 tbsp extra-virgin olive oil
- 1 white onion, chopped
- 2 cloves garlic, minced
- 1 lb ground beef
- 1 cup frozen peas
- 1 cup frozen corn
- 2 tbsp cannabutter
- ½ cup beef broth
- 1 ½ cup prepared mashed potatoes (to make it really easy, grab premade mashed potatoes at your local deli)
- Chopped fresh parsley
How To:
Preheat the oven to 375 degrees and spray a muffin tin with cooking spray. Place the pie crust on a floured surface and use a cookie cutter or glass to cut the crust into circles. Put a pie crust circle in each muffin cup and gently press them down into the bottom. Bake these for 6-8 minutes.
While those are baking, heat a large skillet on medium heat and add onion and garlic. Cook until softened, around 5 minutes, then add the ground beef and cook until browned. Once browned, drain the fat. Return to heat and stir in the frozen vegetables for around 3 more minutes.
In a separate, smaller skillet, melt the cannabutter and add flour. Whisk these until they are completely combined and golden, then add the beef broth. Combine this mixture with the ground beef and cook for 3-4 more minutes. Heat the oven on broil.
Fill the muffin tin with the meat mixture and top it with big spoonful of mashed potatoes. Bake for around 5 minutes or until the mashed potatoes are golden brown. Remove and top with finely chopped fresh parsley.
Green Velvet Cupcakes with Cream Cheese Frosting
These cupcakes are easy and very festive. The frosting is the real crowd pleaser and can be used on all sorts of infused desserts, including carrot cake and pumpkin bread!
Ingredients (24 servings):
- 1 box chocolate cake mix
- 1 ⅓ cup buttermilk
- ½ cup vegetable oil
- 3 large eggs
- 1 oz bottle of green food dye
- 8 oz cream cheese, at room temperature
- ¼ cup cannabutter, softened
- 2 tbsp sour cream
- 2 tsp vanilla
- 16 oz powdered sugar
How To:
Preheat the oven to 365 degrees and put cupcake liners in the cups of a muffin pan. In a large mixing bowl, combine the cake mix, buttermilk, oil, eggs, and food coloring. Once fully combined, put a large scoop of batter into the muffin cups. Bake according to the directions on the cake mix box (around 18-22 minutes). While the cupcakes are cooling completely, work on the frosting.
Use an electric whisk or mixer to beat the cream cheese, cannabutter, sour cream, and vanilla extract. Beat on light until fluffy. Continue to beat on light while slowly adding the powdered sugar. Once the cupcakes are completely cooled, use a baking spatula to top the cupcakes.
